Southwestern Black Bean Soup


Ingredients:

1 pound dried black beans -- rinsed
6 cups beef broth or bouillon
1 large onion -- chopped
2 jalapeno peppers -- seeded, chopped
1 garlic clove -- crushed
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon ground thyme
1/8 teaspoon ground cloves
2 (1 lb EACH) ham hocks
1/3 cup dairy sour cream or plain yogurt
1 large tomato -- chopped


Directions:

In slow-cooker, combine dried beans, broth or bouillon, onions,
jalapeno peppers, garlic, cumin, oregano, thyme, cloves and ham hocks. Cover
and cook on LOW 9-10 hours or until beans are tender. Remove ham hocks;
cool. Shred lean meat; discard skin, bones and fat. Return shredded
lean ham to pot and reheat on HIGH if necessary. Spoon mixture into
individual bowls. Top each with sour cream.

Taco Soup


Ingredients:

1 pound lean ground beef, browned and drained
2 packages taco seasoning mix
1 16oz can tomatoes with green chilis, undrained
1 16oz can black beans, undrained
1 16oz can corn, undrained
1 can black olives, chopped or sliced
1 medium onion, chopped
1/2 bell pepper, chopped
4 tomatillos (optional), chopped


Instructions:

Place everything in a large crockpot, add water, if necessary, to fill.
Cook on Low for 5 or more hours until flavors are blended. Top each
bowl with a handful of shredded cheddar cheese. Serve with sour cream,
taco chips and salsa on the side.

Potato Soup


Ingredients:

4-5 Large potatoes, cubed
2-3 Large carrots, chopped
1-2 Celery stock, chopped
2 cups of milk
2 Tablespoon flour
Salt
Pepper
Garlic, fresh chopped or powder,
optional
Bacon bits,
optional
Water


Directions:

Place potatoes, carrots and celery in crock pot. Add enough water to cover the ingredients about half way. Combine flour and milk. Add flour to milk slowly while whisking to avoid lumps. Add salt and pepper to mixture to taste. Add mixture to crock pot. Add garlic to taste. Add bacon bits if desired. Cook on high for about 4 hours or until potatoes and carrot are fork tender.
